this week in meals


so meal planning is not something i do. or have done. or want to do.
but
since i had managed to put off grocery shopping until today (i'm really good at avoiding it. in case you missed it, i LOATHE the grocery store. HATE it. nor do i like planning. at all. but that's a blog for another time, haha), i thought i ought to get a hop on the week and cut vegetables, prep meat, and figure out what we're eating and when. because my least favorite thing to do in the ENTIRE world is try to figure out dinner when it's 5:30 or 6:00 and everyone's hungry, nothing's defrosted, and it's been a long day.

and a better way to eat, so as not to counteract all the trips to the ymca dave and i make to the together. last minute food is usually not healthy, and eating out is expensive, so i'm going to attempt to plan meals and prep as much as possible in one day and be done.

so here's this week:
today:
put together crab cakes so they're ready to drop in the pan (check)
cut up red/green peppers, onions, carrots, celery, etc for the week (check)
slow cook chicken for tortellini soup (check. and i'll pull it apart tonight after dinner)
tonight:
appetizer: crab cakes (since it's dave's day off and i have extra time and an extra set of hands)
breaded/parmesan crusted thin sliced pork chops, rice pilaf, steamed broccoli
tuesday:
chicken tortellini soup (tyler florence's recipe...it's sooo good)
wednesday:
i'm at work, so the leftover soup or pulled chicken pizza if dave wants something else.
thursday:
sautéed chicken (fajita flavored) with peppers and onions over white rice
friday:
beef stew with potatoes and baby carrots from scratch. yum.
saturday:
chicken parmesean with pasta and maybe ceasar salad
sunday:
chili
monday: (we're having company)
slow-cooked sweet italian sausage, pasta, italian bread with cinnamon butter

okay, so meals are planned, some healthy, some not as much, but that's going to come with time and practice. i grew up with a mum who was a chef and cooks with a lot of butter and a lot of love. and everything she makes is delicioussss. admittedly, i'm a butter gal, and a fried food gal, and a cookie gal, and a gal who's looking at a heart attack if i don't knock it off ;)

so what are you all eating?? because i need more ideas. healthier ideas, too. because i (angrily) walk through the supermarket isles not seeing anything new. so throw me some recipes or some of your staples! widen my horizons! you know how i feel about food ruts ;)

My favorite, Manicotti. Not so healthy but oh so good :) *I always substitute the ground beef with ground sausage.

The great thing about pasta dishes is that you can prepare them, freeze them and cook them another day. Plus you don't get all that extra junk, sodium etc, that you would if you bought it frozen at the grocery store.

I made apple stuffed chicken tonight which was delicious! It's just under 150 calories, 7 grams of fat, 7 grams of protein, and the sodium count really depends on how much salt you put on it. There's a few more nutrition info in the recipe if you'd like to hear more on that :) But basically you roll up the chicken with the apple stuffing in the middle and cook it on the stove top with a little bit of flour and apple juice for flavoring on the chicken. If you'd like more specifics, email or FB me and I'll send it along! :)
